In case you missed it, on Wednesday night October 1 st , of the Lenoir County Fair
Kelly Tyndall, Family and Consumer Science Agent for the Lenoir County Center of
N.C. Cooperative Extension conducted the Casserole Cook-off.
Entries are divided into two categories, Meat and No Meat. This year there were a
delicious number of entries. I hear they sure smelled quite yummy, and by the
judges were quite yummy!!! Following the anonymous judging, winners were
announced and we are lucky enough to have been given the recipes! Hope you will
enjoy and maybe even think about entering your favorite casserole recipe next
year!!

MEAT DIVISION:

1st Place – Brenda Griffin
Steak Casserole

  • 1 pound ribeye steak, sliced
  • 2 pounds potatoes, sliced
  • 1 can mushroom soup
  • 1 ½ cups shredded cheese
  • ½ cup sour cream
  • 1 teaspoon salt and pepper
  • ½ teaspoon garlic, minced

Brown the steak to preferred doneness.
Boil potatoes, slightly, not all the way to doneness.
Layer steak, potatoes, cheese, mushroom soup, sour cream, and combined
seasonings.
Bake at 350 degrees for 30 minutes.

2nd Place – Katelynn Hardison
Chicken Casserole

  • 3 cups rotisserie chicken, removed from bone and shredded or cubed
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 ½ cups cheddar cheese, shredded
  • ½ sleeve Ritz crackers, crushed

Grease an 8 x 8 inch pan with non-stick spray.
Combine chicken, soup and sour cream in a bowl.
Spread mixture into a baking dish and top with creese and the crushed crackers.

Bake at 350 degrees for 30 minutes, and serve warm.

2nd Place – George Griffin
Shrimp Casserole

  • 1 pound shrimp, cleaned and sauteed
  • 2 cans diced tomatoes
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper
  • ½ teaspoon Old Bay Seasoning
  • Angel hair pasta, cooked al dente
  • Parmesan cheese, shredded or grated

Combine all ingredients, except cheese.
Bake at 350 degrees for 30 minutes or until hot throughout. Remove from oven
and top with cheese.

NO MEAT DIVISION

1st Place – Katelynn Hardison
Cinnamon Roll Casserole

  • Melted butter, enough to grease the pan
  • 2 cans of premade cinnamon rolls, reserve icing for topping
  • 4 large eggs
  • ½ cup milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon

Preheat oven to 350 degrees.
Grease the 8 x 8 inch pan with butter.
Slice cinnamon rolls and lay in baking dish.
Combine eggs, milk, cinnamon, and vanilla in a medium bowl. Pour mixture over
cinnamon rolls.
Bake at 350 degrees for 20-25 minutes, or until done in the center.
Drizzle reserved icing on top.

2nd Place – Brenda Griffin
Apple Casserole

  • 4 apples, peeled, cored and sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • ¾ cup sugar
  • ¼ cup brown sugar
  • ½ cup flour
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon salt
  • ¼ cup butter
  • 2 regular-sized Reese’s Cups, chopped

Preheat oven to 350 degrees.
Layer apples in a baking dish. Combine remaining ingredients except for the
Reese’s. Pour mixture over the apples. Dot pads of butter on top.
Bake at 350 degrees for 30 minutes or until apples are tender. Remove from oven
and top with chopped Reese’s.
